Plan of a sugar mill taken from Bryan Edwards' 'The History, Civil and Commercial of the British Colonies in the West Indies.' Mills on sugar plantations were most commonly driven by animals but could also be powered by water or the wind. The freshly cut cane would be fed between heavy rollers by two slaves working opposite one another. This dangerous process extracted the juice which was then piped to a nearby boiling house.
