The develepment of gas cooking apparatus was one of the most revolutionary of the 19th century. By the 1860s gas was already being used for lighting both on the streets and in the home but it was slower to come to the kitchen. Cooking with gas was relatively expensive and did not have the benefit of giving off enough heat to warm the entire kitchen as the large coal ranges had done. But gas was were more practical and the stoves were easier to use and soon everyone saw the benefits.
