Fish was very popular with the Victorian working classes; it was cheaper than meat and was available from fishmongers as well as from street hawkers and fish markets like the one at Billingsgate. Before the invention of refrigeration it was very difficult to keep fish fresh and quality was judged by redness around the gills; some unscrupulous fishmongers dabbed paint or even blood on the fish!
