In the absence of electrical refrigeration, butchers shops had to be kept dry, cool and well ventilated. To this end, most butchers had large windows facing on to the street. When possible, the window would be left open. In winter, if stored correctly, meat could keep for up to 10 days in winter and five days in summer.
