During the 19th century there was actually a strong movement against butchers by opponents of animal cruelty. It was felt that the butcher’s job of slaughtering the animals was barbaric, violent and bloody and it was even suggested that butchers should not sit as members of juries that were considering murder charges as they were, “...apt to be less feeling and humane than other classes of men”. I wonder what F. Birdsey, the butcher advertising on this leaflet, would have had to say about that!
