Before refrigerators were introduced in the late 19th century, it was difficult to keep meat fresh. Butchers laid meat on trays near windows or on stalls that opened on to the street. Flies were naturally a big problem, particularly in summer. Every butcher had fly traps in his shop, using treacle or other sweet substances to attract them.
