Coffee entered Europe through the port of Venice, and the first coffee houses opened in England as eaerly as the 1650s. Coffee houses were popularly known as ‘Penny Universities’: a cup of coffee cost a single penny and customers (all male) would often stay late into the night discussing business and politics.

Very often there were signs reading ‘To Insure Prompt Service’ next to the cups on coffee house counters. This is the acrostic origin of the word ‘tips’.
