At the start of the 19th Century farmers transported their milk to local markets in churns, which were strapped onto the flanks of a horse. It could not be transported long distances in this way, as it would sour on the journey. By the 1860s demand for milk was growing and the development of the railways meant that milk could be distributed to the cities in larger quantities and more quickly.
