In the 19th Century cheeses were made and sold locally and there were many different varieties, named after the area in which they were made; Bath, Cambridge and Suffolk are a few examples. In the 1860s there was a cattle plague that resulted in a fall in the production of milk across the country, this meant that the amount of cheese produced also fell. In the 1870s cheese was imported in large quantities from countries like Denmark, France and Holland.
