Good quality milk was really only available in towns from the end of the 19th century. With the growth of the railways, milk could be transported quickly and easily to cities from previously far-flung parts of the country like Cornwall and Devon. In addition, the 1872 Adulteration of Food Act now legally punished farmers who watered down their milk supplies.
