Pineapple curry: recipe
Chef Tuk Din persents his recipe for pajeri nanas or pineapple curry.
Pajeri Nanas or Pineapple Curry

1 ripe pineapple
6 tablespoons of chilli paste
5 shallots (pounded)
1 clove garlic
1 inch ginger (pounded)
1 star anise and 4 cm cinnamon stick
2 tablespoon kerisik (fried and grounded coconut paste)
1 tablespoon dried prawns (pounded)
Cut the pineapple into small pieces.
Make the kerisik: fry a little dessicated coconut until it turns brown, and then pound it until it becomes a paste
Fry the pounded ingredients and add the cinnamon and star anise and stir until you can smell the aroma.
Then add in the chilli paste and stir till it is cooked, and then add the pineapple and leave it to cook.
Add 1/4 cup water and the kerisik.
Finally add salt to taste.
Leave it to thicken and serve with rice.
