Recipes from Malaysia
On their Spice Trail around London, Taufiq and Nur Hannah collected recipes from two master chefs for Malaysian dishes using ingredients depicted in the drawings from the Raffles Family Collection.
Malaysian celebrity Chef Wan offered his recipe for nasi ulam or herb rice, while Zainuddin Yahya or ‘Tuk Din’, who runs the eponymous London restaurant Tuk Din Flavours of Malaysia in Craven Street, Paddington, contributed recipes for pineapple curry and fish soup with ginger.
