Recipe books list thousands of ingredients, but there's one that never gets the attention it deserves: time. Drawing on her book, The Missing Ingredient: The Curious Role of Time in Food and Flavour, Jenny Linford makes the case for time’s intrinsic yet often forgotten role in creating the flavours and textures we love.

Discover this invisible ingredient at work as Jenny recounts her various encounters with ingredients, producers, cooks, shopkeepers and chefs, and underlines her point with samples for the audience to taste.

Jenny Linford is joined in conversation by cook and author Signe Johansen.

Jenny Linford is a food writer and author of over fifteen books including The Chef's Library, featuring the favourite cookbook choices of over seventy acclaimed international chefs, and Food Lovers' London, first published in 1991 and still in print. Her work has appeared in Delicious, The Financial Times, Modern Farmer and the National Trust magazine. She runs Gastro-Soho Tours, offering personal guided tours around London's food shops. Travelling to Denmark, Italy, Malaysia, Singapore and Spain as well as travelling around Britain to meet producers including bakers, chocolate makers, asparagus growers, ice cream makers and farmers, The Missing Ingredient showcases the voices of the people she has encountered and championed over 26 years.

Signe Johansen is a Norwegian-American cook and author of Solo: The Joy of Cooking for One; How to Hygge; Scandilicious and Scandilicious Baking. A long-time whisky enthusiast, she is the co-founder of 'Spirited Women', a project to get more women into whisky and other spirits. After graduating with a bachelor's degree in archaeology and anthropology from the University of Cambridge, she trained at Leiths School of Food and Wine in London, worked in several of the UK's top restaurants and went on to do her masters in the anthropology of food at SOAS Food Studies Centre at the University of London.
