Chantelle Nicholson is the multi-award winning Chef Patron at Tredwells restaurant, as well as Group Operations Director for Marcus Wareing Restaurants. Chantelle trained as a lawyer before discovering her passion for food, and is now one of the UK’s leading female names in the hospitality industry. Growing up in New Zealand, Chantelle learnt first hand about seasonal food and the ecosystem of the garden from a very tender age. Driven by both her upbringing, and also the health benefits of both vegetables and whole grains, Chantelle champions plant-based cooking. Her debut book under her own name, Planted, was published in 2018 and focuses on plant-based recipes that deliver on both taste and creativity.
Catherine Phipps is a food writer, broadcaster and recipe developer. After a stint working as a chef in the Caribbean, she started her food writing career on the Guardian's Word of Mouth pages. Her main interest lies in exploring how we can cook and eat good food that is both healthy and ethical. She has written several cookery books, the latest of which, Leaf, is out this autumn and explores the myriad ways in which we can use leaves in our every day cooking.
